Cassava (also known as Karrapendalam, Kavva pendalam,Mara Genasu,Kuchi Kizhangu, Maravallli Kizhangu,Kappa,Simla Alu, sago, sabudana, Jawwarisi) can be prepared in similar ways to potato, for example, it can be boiled, mashed, fried or even baked. Boiled cassava is also made into a popular sweet pudding or "cassava cake". After boiling, cassava may also be deep-fried to form a snack or side dish.

South Indians use tapioca for preparing several dishes on almost a regular basis. What stands out in the lot is a plate of humble kappa puzhukku or simply kappa from Kerala. It is a comforting dish made using boiled tapioca, coconut paste, onion, red chillies, curry leaves and different spices.
