Tricolor Vegetable Pulao
Ingredients (Serves 4):
For Saffron Layer (Orange):
1 cup basmati rice (cooked, divided into 3 equal parts)
½ cup grated carrot
1 tsp ghee
½ tsp cumin seeds
Salt to taste
For White Layer:
1 portion of cooked rice
2 tbsp fresh yogurt (optional)
Salt to taste
For Green Layer:
1 cup spinach leaves
½ cup coriander leaves
1 green chilli
1 tsp oil
½ tsp cumin seeds
Salt to taste
Method: Saffron Layer: Heat ghee in a pan, add cumin seeds, then sauté grated carrot for 2–3 minutes. Mix in one portion of rice and salt. Set aside. White Layer: Keep one portion of cooked rice plain with a little salt. If preferred, mix in yogurt just before serving for a creamy texture. Green Layer: Blanch spinach and coriander leaves for 2 minutes, then blend with green chilli into a smooth paste. Heat oil, add cumin seeds, sauté the paste for 2 minutes, and mix in the final portion of rice and salt.
Assembly: In a serving dish, layer the carrot rice at the bottom, then plain rice, then green rice on top. Serve warm with raita or curry.
Tip: You can also adapt this into a tricolor salad by replacing rice with cooked millets or quinoa for a healthier twist.
