Ingredients (South Indian Garam Masala Blend)
Coriander seeds – 4 tbsp
Fennel seeds – 1 tbsp

Cloves – 1 tsp
Green cardamom – 5 pods
Cinnamon sticks – 2-inch piece
Dry red chillies – 3
Star anise – 1
Bay leaf – 1
Mace – 1 piece (optional)
Nutmeg – a small piece (or ¼ tsp grated)
Quick 10-Minute Method
Dry roast each ingredient (except nutmeg) separately on low flame until aromatic. Allow them to cool completely. Grind all roasted ingredients together in a spice grinder to a fine powder. Add grated nutmeg, mix well. Store in an airtight jar. Use as needed for that deep, authentic South Indian flavour!
