Ragi Flour for Traditional and Everyday Recipes

Farmers Gold Ragi Millet Flour 1kg is a milled finger millet product for porridge, flatbreads, dosa-style batters and selected baking recipes. Ragi is also known as finger millet, nachni and kezhvaragu in different regions.

The 1kg pack suits households that use ragi flour regularly or want enough for several different preparations. Because ragi flour behaves differently from wheat flour, recipes should use the liquid ratio and binding ingredients written for finger millet flour.

This product is part of MyLocalMart's Other Flours subgroup within the wider Flour range, alongside rice flour, corn flour, atta and other specialist flours.

What Is Ragi Millet Flour?

Ragi flour is made by milling finger millet grain. It has an earthy flavour and is used in both savoury and sweet preparations, including ragi porridge, roti, dosa, pancakes and biscuits.

Finger millet is botanically known as Eleusine coracana. It is a cereal grain used in traditional dishes across different regions of India and elsewhere.

In South Indian cooking, ragi flour is commonly known as kezhvaragu maavu in Tamil. In other regions, it may be called nachni flour or ragi atta.

Ragi flour does not develop the same elastic dough as wheat flour. Some flatbread and baking recipes therefore combine it with other ingredients or use preparation methods specifically designed for finger millet.

The flour can be used for traditional recipes as well as selected modern baking preparations.

Why Choose Farmers Gold Ragi Millet Flour 1kg?

Popular Ways to Use Ragi Flour

Ragi flour can be used in several traditional and everyday preparations.

1. Ragi Porridge

Ragi porridge is one of the most familiar ways to use finger millet flour.

The flour is mixed with liquid and cooked until it reaches the consistency required by the recipe.

It can be prepared in sweet or savoury variations depending on the ingredients used.

For a smooth result, many recipes begin by mixing the flour with cool liquid before heating.

2. Ragi Roti

Ragi roti is a traditional flatbread made using finger millet flour.

Because ragi flour does not behave like wheat flour, the dough may require warm water or another preparation method to make it easier to shape.

Follow a recipe designed specifically for ragi roti rather than replacing wheat flour directly.

3. Ragi Dosa

Ragi flour can be used to prepare dosa-style batters.

Some recipes combine it with rice flour, yoghurt or other ingredients, while others use fermented batters.

The correct liquid ratio and resting time depend on the chosen recipe.

4. Savoury Ragi Pancakes

Prepare savoury pancakes using ragi flour, vegetables and seasonings.

Onions, chillies, cumin and other ingredients can be added according to the recipe.

Cook the batter on a suitable pan until the pancakes are fully cooked.

5. Ragi Idli

Ragi flour can be included in idli recipes designed for finger millet.

The flour may be combined with other ingredients to create a batter suitable for steaming.

Follow the recipe's instructions for mixing, resting or fermentation.

6. Ragi Biscuits and Cookies

Ragi flour can be used in biscuits and cookies formulated for finger millet flour.

It contributes an earthy flavour and behaves differently from wheat flour during mixing and baking.

Use a tested recipe for the appropriate proportions of flour, fat, sugar and other ingredients.

7. Ragi Mudde

Ragi mudde is a traditional preparation made by cooking ragi flour with water until it forms a thick mixture.

The cooked mixture is shaped into portions and commonly served with suitable curries or gravies.

Follow a traditional ragi mudde recipe for the correct cooking method and consistency.

8. Multigrain Flour Blends

Ragi flour can be added in measured quantities to multigrain flour blends.

The proportion should be selected according to the intended recipe.

Adding ragi flour may change the dough's texture and water requirements, so adjustments may be necessary.

Preparation Tip: Use recipes written for ragi flour. Direct one-for-one substitution for wheat flour may change dough structure, texture and cooking results.
